    I've NEVER seen packers at our Costco just flats. We will be trying a Wagyu in competition this year for the first time. The flavor is just amazing!!

    IF you want to venture to Norfolk there is a place on Military Highway between Indian River Rd and I-264. It is Price's BBQ and it is pretty good.

    Cutting back on wood - Rib Smoke

    I haven't tried ribs on the WSM but when I cook on the kettle it is with only 2 or 3 pieces of apple or cherry!

    Butts were GREAT but I over cooked the ribs for my taste but everyone else loved them since they were fall off the bone ribs.

    Got two butts rolling right now with cherry chunks and K. Tomorrow the ribs go on the kettle with the secret rub from KC and apple wood!

    I was just wondering the differences between pople on this topic. What do you use, what meats do you use it on...etc Does anybody use saran wrap before foil?

    Where do you buy your smoke wood?

    I have actually been buying off of ebay. 25lbs of cherry for $27 and maple for the same. I think the apple I purchased cost about $30 for 25lbs!

    Chuck Roast

    I really appreciate all the advice. I put it on about 90 minutes ago and the temp is at 245 since I have had two butts on since this afternoon.

    Slicing Ribs ?

    I agree with Jerry. I always slice from the back since you can see the bone better.

    It actually does help a lot! I guess I will try to put it on after dinner and if it gets done sooner then I will just wrap and put it in the cooler.

    I have a 4.5 pound chuck roast and it is the first time smoking a chuck for me. How long should i give it to cook? IT has to be done before I leave tomorrow @ 7:30 am.
