Beautiful seeing a grill in the snow! The best side to go with tri-tips is pinquito beans (in the spirit of Santa Maria BBQ) I order the beans in bulk each year.

An excellent compliment to grilled fish or lobster is a smoked tomato compound butter.
- Split Roma tomatoes lengthwise and place on smoker skin side down. Smoke for 30-60 minutes.

i mostly use pecan for everything though i do throw on some apple with the butts. lately though i have been getting into oak and have some manzanita to try. if only one choice then pecan for sure.

I was introduced to Tri tips while in Santa Maria and love them. They cook the meat over red oak and provide a side of Pinquito beans and bread. I live in VA, so I have the beans shipped in bulk once a year.
