    HELP!! cool temps & high wind!!!

    Bone-in butt

    Awesome, thanks! i can't wait for saturday. i was going to apply a rub tomorrow night and then do the mustard slather/rub in the morning prior to cooking. i'm hoping that makes for one delicous butt!!! i'll know for sure saturday night. already have my eastern NC sauce made and waiting!!

    Bone-in butt

    planned on smoking a butt this w/e. usually i've been using boneless shoulder roasts i buy at the store. this time i got a shoulder butt roast with a piece of the bone still in it. will the bone affect my cooking time at all?

    smoked bluefish filets

    picked up 6 bluefish filets from a party boat trip. i want to try smoking them but i don't know where to start. i'm thinking it'll be a low, real low, heat and a lot of smoke. anybody have some recipes or suggestions? thanks!!
