Tried a marinade this weekend on some test subjects. My testers, couldnt tell. So i'm going to leave that out of the process, now just need a never miss rib sauce/glaze

If you plan to sauce it you should be fine holding it a few days without sealing too. We do that all the time. Especially for small catering jobs. And it must not be bad, we get repeats all the time. Have fun with the draft I'm cooking for on the 27th.

Its not really a moisture issue i'm trying to tackle. More so getting more flavor deeper into the meat. I dont have any tenderness problems, just trying to amp up the flavor.

Consider getting a new kettle. I currently own a standard 22 kettle but looking at a one touch. Can anyone tell me the advantages and just what i can do with the one touch vs. regular? thanks.
