    Decisions, Decisions

I just did the herb coated standing rib roast a few weeks ago. That was GREAT!

    My first smoke

Mark, I am in Atlanta as well. Did you do the Minion method or just light the charcoal in chimneys? I did the herb coated standing rib roast a few weeks ago when it was cold (not as cold as it is now!) and got mine up to a little over 400. If you did do the Minion method this time, next time...

Cutting a notch in top of smoker

if it does then just put some wadded up aluminum foil in there with the cables to act as a gasket. That or paper towel depending on what temp you are running.

Cutting a notch in top of smoker

When I did mine the first thing I did was drill a 1/4" hole as close to the bottom of the lip as I could then used the dremel to cut the notch up. What I would do is hold your 4 cords together and then pick the drill bit size for this initial hole based on that size. This is more than enough...

    Smoke 8 - 7lb Butts in an 18" WSM

Chad, thanks for the tip! I was wondering how to get them to show up in the post like that. Good news is that I have all the materials to do them now. Bad news is that this idea came out of a 10 butt cook (if I need more than my 18" WSM can do I have to fire up my other 18" WSM :) that I just...

Cutting a notch in top of smoker

Russ, I like the idea of the notch down there in that you don't have to worry about the wires getting caught in the lid unless you make sure they are in the notch each time you put the lid back. The main drawback I see to this one is that with the notch in the top you can put your probes in...

    Smoke 8 - 7lb Butts in an 18" WSM

LOL, well you know I want my butts to be held correctly. Right now the bars are going to be 1/4-20 304 SS threaded rod and the bottom plates are 1/8" thick 304 SS. Unless I get a mamoth butt in there I think they will hold up fine, of course need to actually try it. Yeah, the ribs were an...

    Smoke 8 - 7lb Butts in an 18" WSM

All, For awhile I have been trying to come up with a way to do a bit more inside my 18" WSM. I was able to get up to 6 ~7-8lb butts (what I typically find at my local sams) but was trying to think of a way to bump that up. Add to that that I did not want to increase the horizontal cross...

Cutting a notch in top of smoker

Benji, I used the heavy duty cutoff wheel (http://www.homedepot.com/p/Dremel-Heavy-Duty-Cut-Off-Wheels-040-in-thick-20-per-pkg-420/202263142?keyword=dremel+heavy+duty+cutting+kit#.Up-ZGeJnAew). A little over $6 for 20 disks and I used 1 disk to cut the notch in 2 18"WSMs. So you would need a...

Anyone have a butt in front of them?

All, An odd request but does anyone have a 7-8lb boston butt handy that they could measure it and post that here? Thinking height/width on the big and small ends and then overall length? After my cook last weekend I have an idea for use in the 18" WSM and am going to start on some drawings...

    foiling for boston butts

All, If you do foil butts, how do you foil it? I do foil my butts as part of my recipe and while the majority of the time it works out great, there are some times when I pull them out of the smoker that I can get a tear (sometimes because of the bone, sometimes not) in the foil and then all...
