    if it does then just put some wadded up aluminum foil in there with the cables to act as a gasket. That or paper towel depending on what temp you are running.

    First cook with the notches this weekend! Did 10 boston butts, 2 standing rib roasts, sausage and chicken. Worked great and yes it did shut down when I closed the vents. No noticeable change in normal operation.

    brine max duration?

    All, Is 24 hours too long to brine boston butt? I typically do 12 hours but with work and other commitments I need to do it tonight say around 9pm and then start the cook the next day around 11:30pm. Is this too long to be in the brine? Possibility of being too salty?

    Frank, Yeah, I agree. Going to drill the hole and then cut down to either side of it with the dremel.

    Frank, Yeah, that was the original idea. The good side of this: no chance of them getting pinched by the lid. Bad side is if I want to pull either rack out and the probes are on it, I will have to take the probes off.
