    Greek Coney Dog Sauce

This has been my go to coney sauce for years. Has anyone done the simmer step in the slow cooker? I am going to give it a shot. My plan is to brown the beef, cook the onions, add all of the spices and cook until fragant, then add everyting to the slow cooker with 1/2 cup of beef stock and...

    German Kasseler

Thanks! I haven't cold smoked in a while. Might as well load up the WSM with some bacon too.

    German Kasseler

Does anyone make German Kasseler? I had some at an Oktoberfest an really enjoyed it. What I had was brined, smoked, then grilled and served with an onion gravy. From what I have read, it looks very similar to Canadian Bacon. My plan is to use a whole loin, brine it, then cold smoke it. I am...

    Using pickle juice in brine

I have made this recipe many times. I prefer to use boneless, skinless thighs. I brine in the pickle juice for 2 to 3 hours, pat dry, drege in coating (I use either ad hoc at home fried chicken or serious eats chick-fil-a clone without any salt), dip in buttermilk, then back into the drege...

    Do you make Philly Cheesesteak?

I like American. If someone puts a steak in front of with with whiz, I'll still eat it because well...it's still a cheesesteak. Sharp provolone is a good choice too. Some places around Philly do what they call an Italian Style steak with sharp provlone and either broccoli rabe or spinach...

    Kalua Style Picnic Shoulder

I found a few threads about this here on the forum but this is my first time making it. I have a couple of skin on picnic shoulders. My plan is to score the skin in a diamond pattern, rub with alaea salt, smoke at 225-250 unti it reaches 165, wrap in banana leaves and foil, then back on the wsm...

    Low Country Boil Recipe Request

Here I go again, bumping 10 year old posts. I have been making seafood boils following the guidelines from Kevin K above and it really is the best. Doesn't matter what seafood you put in it. Just have everything in order and write down your timeline. I always have shrimp and crawfish but...

    Keri's Hog-Apple Baked Beans

My favorite is to trim spare ribs to St. Louis, smoke the trimmings and the ribs on the top rack with the beans underneath. Then add the trimmings to the beans, they are a meal in itself.

    Keri's Hog-Apple Baked Beans

Hello All. I haven't posted in a long while. I do occasionally pop in to refresh my memory about some recipes and techniques. Just bought all new innards for my WSM so I'll post some pics of my first cook. I just realized that I have been making these beans for 15 years. I can never throw a...
