    Prime Brisket

    My Costco usually carries a half dozen to a dozen prime packers at $3.79/lb ranging in weight from 10-16 lbs. They also have a good selection of flats but they are close to $6/lb.

    Wrapped at 170 and brisket ran up to 190 in an hour. Doesn't seem like it could be done this quick - only at hour 7. Thinking I'll give it atleast another hour before probing.

    Thanks Mike. I have to be in the stall right now. Last hour only went up 3 degrees. Currently at 165 - 5.5 hours in.

    In the middle of my first brisket cook. Put a 12lb whole brisket on at 4am and have been running 240 at the grate. I'm already up to 153 on the meat. Does that sound right given that I'm less then 2.5 into the cook? I'm thinking my probe might not be in correctly but don't want to open up to...

    I put the chimney on the WSM charcoal grate when lighting. Thanks all for the feedback and ideas. Ill start trying these on the next smoke. I also think I need to dump sooner so I'll definately start doing that as well.
