Membrane on Back Bone Side of Ribs

Can't say I've had much of a problem removing the membrane-I do it all the time(butter knife, paper towel)

    Saving cooked Pulled Pork

I would freeze it into portion sized servings, rather than in one big bag. I prefer to let the bag thaw in the fridge, boil water, take it off the burner, drop the bag in, cover and let it warm to serving temperature.

    Temp troubles

2 bottom vents wide open; the other closed. I'm pretty sure the therms are correctly reading the temps. Whatever happened, its working, as its holding steady near 230* at the lid. When I need to get the temps up later, I'll try setting the lid slightly ajar. Thanks for the tip!

    Temp troubles

I'm trying to follow the directions for the BRITU, but am having trouble getting the temps up. I followed the directions regarding lighting the charcoal. I put the ribs on at 250* and the temps dropped and are still at ~170 at the lid/150 at the grate an hour later. I stirred the coals and have...

    Foil in bottom of WSM

This is what I do and it works well. <BLOCKQUOTE class="ip-ubbcode-quote"><div class="ip-ubbcode-quote-title">quote:</div><div class="ip-ubbcode-quote-content">Went out in the garage, got a 39 gallon trash bag and put over the smoker like a cover. Then put the regular cover on over it. We'll...

    Dry Brisket?

I had a similar experience this weekend. The brisket hit 172 after 8 hours, then started to drop. Since I was running out of time, I foiled and put it in a 300 degree oven for about an hour or so and got it up to 195. I then put it in a prewarmed cooler for an hour and sliced. It had good smoke...

    Delicious grilled asparagus

I don't bother blanching them; just put em on the grill until nicely charred. This also work better if they are not "tree trunk" size.

how to store a cooked pork butt

Paul, Thanks for your thoughts. One thing for sure, a pulled butt will take less space in the refrigerator than a whole cooked one.

how to store a cooked pork butt

I was planning to mix the bark in with the rest of the butt, but I was wondering if STORING the cooked butt(before I pull it) with the bark on(or off) makes a difference. For that matter, should I pull it and store or store and then pull the day of the party?

how to store a cooked pork butt

Due to some late nite Friday plans, I will need to Q a butt overnight Thursday(using the MM) for a small get together on Saturday. What are some recommendations regarding keeping it for a day? I know I will have to refrigerate it, but should I pull off the bark first, then store it seperately...

    ? about Jack Daniels pellets

The bag says they are "smoking pellets made with Jack Daniel's mellowing charcoal." The instructions suggest using a foil pouch and to use 1/3 cup of the pellets. They are not to be soaked in water before use. Supposedly will give 45-60 minutes of smoke. I still have the receipt, so if I don't...

    ? about Jack Daniels pellets

I just picked up a 1 lb. bag of Jack Daniel's smoking pellets(they were reduced in price). Anyone have any thoughts on whether they are any good? If so, what have you used them for?
