    Need Help NOW! If possible

    I would say to put more charcoal on. How long have the ribs been on the smoker? If they have been on for awhile you probably could wrap them in foil and place in the oven if you want to eat tonight. I usually throw a little apple juice in with the ribs with the foil.

    Temperature probe needed

    I have the ET-7 and to be honest i really dont like it that much. Range is awful! Just curious I put one probe in the meat and let the other one dangle from the top vent so I can get smoker chamber (and that temp seems to be off)....how do you do it?
