Smoky mashed potatoes

Can I Prepare these Smoky Mashed Potatoes Ahead of Time? Kevin: Can I make these ahead of time and hold for a couple hours, say in a Crock-Pot, or will they become pasty -- like from overstirring as mentioned above? Thanks, Chris

    Chuck Roll Question

I would like to smoke a chuck roll (or maybe two?) for an upcoming party. I need to feed around 60 people. How many chuck rolls do I need? I'm assuming I could get two of them into the WSM Cooker. Thanks for your guidance!

Biggest "wow" factor in shortest time

After some thought, and reading a myriad of different threads here; I'm going to smoke the loin backs today and take them out to the cabin. I did some reconnaissance to check out the "grill" which is just a typical campsite iron grate contraption. It's rather small, might hold 3 racks at a...

Biggest "wow" factor in shortest time

Thanks all, for your suggestions. The cabin claims to have a grill, but I haven't been able to verify what sort of grill. An actual one, or just a fire pit that you can load with charcoal. I think I'm going to just pack the WSM with me and load it up with loin backs that morning. I've made...

Biggest "wow" factor in shortest time

I'm cooking for 20 adults and 10 kids at a family reunion next week. Need lunch ready @ 11:30am and am struggling between these choices:

1. Pre-smoking brisket or ribs ahead of time and reheating on site
2. Smoking ribs on site with an early morning start...

    Capacity Conundrum

Brad: I do have a rib rack (actually two of them). I think I'll smoke the brisket on top starting tonight, and move it to the bottom grate tomorrow when the loin backs need to go on. Whenever the brisket is finished I'll move it to a pre-heated ice chest to hold. Thanks, Chris

    Capacity Conundrum

I'm serving a three-way (brisket, pulled pork, back back ribs) BBQ next Friday. I had planned on smoking the pork butt this weekend and reheating on Friday. I had also planned to smoke the brisket overnight (starting on Thursday, to be finished Friday). I want to smoke the loin back ribs on...

    Install Trouble with StokerLog

Amir: Thanks for the suggestion. Unfortunately it won't run the file - says something like the file is not an .exe or .bat file. I am running 64-bit Vista, have you had trouble on that OS before? The only other thing I can think of is maybe a .NET issue -- I'm having trouble with a .NET...

    Install Trouble with StokerLog

Hello All: Running a Vista machine here and can't get Amir's StokerLog installed. The error box says: The system administrator has set polices to prevent this installation. If I right click the file, there is no option for "run as administrator," which is the way I normally get around this...

    Quick Stoker Question

Larry: Thanks for your guidance. I did order two sets of eyelets from the Guru site. Also placed my order to Rock's for a loaded Stoker (three food probes) and the need WSM adaptor. Can't wait to install the Stoker hardware and Amir's Stokerlog software!

    Quick Stoker Question

Okay, Larry, will do. To the original question, do I need two sets of eyelets, then? (Two food probes, one temp probe) Thanks for your help!

    Quick Stoker Question

I'm getting ready to order a Stoker for my WSM Cooker. If you are running a cook with two food probes, where do you thread the temperature probe (assuming the food probes go through the grommets that Rock sells)? Should I buy two sets of grommets, one for each side of the cooker? Thanks for...
