    Thanks for the info guys. Just put the rails in the kettle and will try a chicken tomorrow. Say if I wanted to do something like a pork loin, how is it to control temp on the kettle and can I keep it going fairly steady by adding charcoal. Thanks again in advance. buff

    First long cook with lump completed.......

    In my cooks I have found that I like the consistency of Kingsford. Getting a bad bag of lump usually happens at the worst time. I can count on temperature control to remain relatively the same on each cook, can't say that for the lump. Plus, it is available here. buff

    Thanks Paul, I just came back from ABQ where I ate at Rudy's BBQ. With their pulled pork, there seemed to be some kind of grease, for lack of a better word, that made the pork moist and delicious. Just trying to duplicate.     Does anyone use the drippings in their pulled pork to keep it moist? Just wondering if it is safe and what would be the best method of collecting the drippings while using water in the pan. Any help appreciated. buff
