    Went Apple Picking... (BBQ related)

    Wow! $55 a bundle? I picked up split apple logs (triangular, about 3" x 3" x 5" or so) about 15" long for $0.75 each from one of my local orchards. Its a win-win as we all felt like we got a deal.

    Plateau

    The time at plateau varies each time. Don't worry about it too much. And don't get freaked out if the temperature drops some. I lost 3 degrees on the butt temp this weekend during my smoke (181 down to 178), even though the smoker temp stayed right at 220 (thanks Guru).

    Temperature Differentials

    For the record, temp is more complicated than Steve's statement. You can google "wet bulb", "dry bulb", and "black globe" for some more info on it. But, that is really overcomplicating what is going on here.
