    Ribs for 15 to 20 folks

    I cooked 4.5 racks of spares for a party of 8 a couple of weeks ago. I had excactly a rack and a half leftover....so 6 racks would probably be ok for 15 people, probably need 8 racks for 20 people.

    Picnic vs. Butt

    Can't be sure, but it was probably Sweet Baby Rays, or Stubbs. I just used enough to get it moisted up.

    I've cooked about 20 butts so far, pretty happy wth the most of the results. The one picnic roast I smoked turned out kind of dry also. Same as butt cooks, I pulled it off by temp. Some apple juice and sauce moistened it up, but I'll probably stick with butts.

    Alton Brown porterhouse steak

    I tried Altons dry aging process on three 1 1/2" thick, choice Ribeyes this week. Used two chimneys of GFS lump charcoal on my kettle. Only a little Kosher salt for seasoning. Seared about 2 minutes each side, and finished them indirect. Pulled mine at 120, my wifes about 135, and my MIL's at...

    Faulty Damper Rivets

    I purchased a new 18.5 last December, all 4 vents were very loose. Weber quickly sent a new bottom section, and lid.
