    Beef Brisket...where to buy?

Thanks guys, I'll give Costco a call. Interesting that you mentioned full packers vs flat cuts. I've been trying to quickly get up to speed on what I should get and I think I've decided on just flat cuts. But I'm willing to listen to arguments for the full packers. Your thoughts? Thanks, Brad

    Beef Brisket...where to buy?

Fellow smokers, I'm all set to tackle a beef brisket this weekend, or at least I thought I was. I have been buying all of my meat from Costco so far, but I just told a buddy at work that I was going to try brisket, and he told me he didn't think Costco carried it. So I figured no worries, I'll...

Ok to smoke chicken and salmon at the same time?

Thanks Chuck, that's probably what I will do. I imagine if I load it full of charcoal, I'll have enough burn time to do all 4 chickens and then the salmon separately. Since I'm on the Right Coast and you're on the Left Coast, you'll have to settle for a picture of your plate!

Ok to smoke chicken and salmon at the same time?

Going to use my WSM for the third time this weekend. I was so happy with the smoked chicken I did that I'm going to try that again. Instead of just 2, I'm going to do 4. My wife has been after me to try salmon, so I was thinking with the 22" I would have enough room to do all 4 chickens on...

    Hello from TN

Welcome aboard Rick. Met my wife in Johnson City while in college! This place is great. Only been here a few weeks myself and it's helped me out tremendously already.

    Hello from Smithfield, VA

Yes I did brine them. Very basic brine of salt, sugar, black pepper, and Cheyenne pepper. Yes boating in Smfd is a lot of fun in the warmer months.

Bone In Pork butts ideal internal temp

Hey James I did watch a lot of that game and I'm glad I picked them to win in my bracket! My first try with butts went ok...B/B- if I were grading myself. I think my main problem was I didn't put enough coals in at the start. It kept a steady temp of around 230 from 9:30pm til 6am. I was...

Bone In Pork butts ideal internal temp

Thanks to all...one last question. If I'm going to do 4 butts, roughly how many hours should I expect to have them on? 8? Was thinking about putting them on around midnight tonight and checking them around 6am.

Bone In Pork butts ideal internal temp

I am going to smoke 4 bone in butts tomorrow on my 22in WSM. A friend of mine just told me that they should be ready at 165-170. I read a recipe on this website that said to cook them til 190. With them being bone in butts, I want to make sure I cook them good enough for the bone to come out...
