    Smoke day pork belly

Years ago, when I first bought my WSM, my first cook was pork belly burnt ends. It was good, but I haven't done them since. My son, however, recently brought me a 4.5 lb skin on pork belly, and that's what I cooked today. I borrowed techniques from several YouTube videos, and mashed them...

    Day 2

Okay , resting the WSM after yesterday. Today smoking some interesting "Korean BBQ Sausages" the Mrs found at [correction] the farmer's market. PK go is about the right size...using the unspent charcoal and apple wood from yesterday's rib cook on the WSM. Waiting for clean smoke.

    Baby Backs

Usually I have done a longer cook for smoke day, and planned on brisket, but Costco was sold out. I know the family loves baby backs, so went for that...3 racks, halved, 3 halves on each grate. Normally would so this on the kettle, but hey, WSM smoke day!

Had planned on brisket, but Costco was sold out. Doing baby back ribs instead. Family is not complaining. :)

My first "invasive" WSM Mods -- Looking for advice on technique.

Hi Folks, Well, the weather is finally nice, I'm social distancing, and getting the itch to do a few mods I've been planning to my 18" WSM. I've done a few mods to my Jumbo Joe first, to build up my confidence on a $70 grill before doing anything to my WSM, and I'm finally ready to bite the...

Dialing in an adjustable lid thermometer to read grate temp

I have seen post and YouTube videos where folks installed an adjustable thermometer on their lid and adjusted it to report grate level. I decided to try this on my Jumbo Joe first, before drilling on my WSM. What I have found is I can get it to match at one temperature, but that...
