Would like to thank you all for your tips and advice. Cooked up 4 large racks Saturday for my guests, turned out great. Followed everybodys advice and did not add extra chunks. Used common sense and cooked normally. Basted with pure apple juice (thanks wifey) throughout, cooked 6 hours over average heat of about 225.....was a hit...punch line to this is that 2 of my guests bought a WSM today...this must be a testament to good BBQ...oh by the way they will be ditching their $1000 plus Napoleon's shortly. Thanks for the help..
