Pulled Pork That Didn't -- A Happy Mistake

Just my humble opinion, I have had the best results with hitting 196, and then foiling and resting a few hours. It 'seems' as though the butts are a little more juicy. I have taken my butts to over 200 and then foil and rest, it seems the butts are just a little more dry. Again just a personal...

Pork Butt Storage for the Deer Shack

Hey great minds think alike !! I just did 18 lbs of butts for pulled pork for hunting here in WI also. I smoked 'em, wrapped in foil and let them rest for a few hours. I then proceeded to shred them and filled a few food saver bags and sealed 'em and straight into the freezer. Up at deer camp I...

    Pork butt prices?

Sams Club regularly has them for 1.68/lbs. If you buy an entire case the price drops to I think 1.34/lbs.

Newbie Upgraded from ECB to WSM 22.5"

I would pay it forward with the Brinkman. Spreading Karma is always good. I have given every single grill/smoker that I 'outgrew' away to friends and family. Most are still in use. Welcome to the Weber obsession !!

    Winter Grilling

I don't think I have ever had a real big difference in fuel used in cold winter as opposed to summer time. The biggest difference for me is I don't mind waking up to do a meat temp check/ fuel check in my boxers for overnight summer smoking, but in the winter you have to get some actual clothes...

6 butts on an 18.5 WSM?

Last summer I did 6 8-10 pounders for a dual graduation party I co-hosted. It was a little tight, but still had room to close the lid. I smoked a little lower temp wise(225-238) and with a full water pan. Looking back at my post from last year, it appears the session went almost 22 hours, and I...

Smoking Meat - Do the bells and whistles matter?

IMHO....nope, all the bells and whistles makes no difference in how good BBQ can taste. I've smoked ribs with nothing more than wood smoke, olive oil and salt and pepper that turned into one of the best tasting ribs I've ever done. I've also done butts that were injected and brined in a porter...

Opinions needed on selling two SS Performers

I have a newer Performer that I had no problem paying $75 for. It was dusty/dirty but in perfect shape. I have always wanted a SS performer, any color and I was prepared to spend up to $100 for a MINT shape SS one. I ended up grabbing another 18.5 WSM instead that came across my path but I...

    Fast cooked spare ribs.

Looks great !!! I've done high heat spares and baby backs as well. I usually foil them with a nice porter or some other dark beer. The steam action from the beer smells amazing and really adds quite a flavor dimension.

    Chucks and Chops

Looks great !! Jim..I have to ask.... How are you not like 600 lbs ? I've had to cut wayyyyy back on my grillin, and have had to reintroduce myself to grilled chicken breasts due to my love of smoked/grilled beef/pork and my expanding waistline. :(

14.5" Weber Smokey Mountain Cooker Model 711001

well that's ridiculous....still two years out ? Doesn't make sense. Having worked in manufacturing my whole life, I can not believe they are investing significant expenses in new machinery to produce these only to have them not go on sale for another 18 months plus. The only industry that I...

    Chuck Eye Steak

Same with us !! We now almost exclusively buy chuck eyes. They are supremely tender, well marbled, and taste fantastic. Because of the price (in my area, 3.99 to 4.99/lbs) I've done them with just salt and pepper, marinade, and various seasonings, I don't feel guilty. They are so awesome !! And...
