    Kevin, when referring the temps, most recommend 225 - 250 for low /slow. Would you use the vent temp of 250 or use a temp a little higher to factor in the difference? Thanks

    Harry Soo Ribs fail

    Sorry about your experience. I use Harry's rub and smoke for two hours then foil with the BS, honey and apple juice for one hour and check for tenderness. Sometimes I cook for and additional 30 mins. I love this recipe and have used it many many times. Andy

    Those knives are really nice. The wave looking pattern is actually individual layers of steel folded hammered together. I believe the process is Bessimer steel. I have a few pocket knives made this way. Andy

    It won't be that tight. The intake blower is about 10 cfm. No exhaust fan. My main concern is adding the cold outside air as opposed to the warmer air in the enclosure. Thanks

    If building an enclosure for low temps, when using an ATC, do you place the intake hose for the blower inside the enclosure? If so, will the intake affect the draft and allow the smoke to exit? Andy

    I foil my ribs in apple juice mixture for the last 90 mins. I have read the ribs hold there shape if they are rolled. Will this cause a problem? Thanks Andy

    Thanks for your replies Dave and Mike. Dave the baby backs I get from Costco seem to be larger(longer) than the ones shown. Is that a problem? I assume the main point is to not let the ribs touch. Thanks again Andy
