Ribs- just wondering what this does, and if you have a special method.

I add some drippings, unless I've got beans under there sucking up all the drippings, and some beer. The beer came about because I didn't have enough drippings once, was out of apple juice and, well, I had a beer in my hand. Since that is always true while smoking, it has become routine. I...

    Beer brats: Oh Yeah !

Looks fantastic. I've got some in the freezer, so this is on the to-do list.

    Stubbs sauce or marinade

I recommend Stubb's Mopping Sauce and Weber's Kickin' Chicken rub for a fantastic BBQ chicken combo.

    Kingsford Smokehouse Wood Briquets

I think that's about right. They have small, thin reeds of wood in them too, so a little more than just sawdust, but essentially you're right.

    Kingsford Smokehouse Wood Briquets

Anybody use these new (or at least new to me) smokehouse wood briquests from Kingsford instead of wood chunks ? Such as these: http://www.kingsford.com/products/details/kingsford-smokehouse-style-with-hickory/ I bought these in a pinch since I was on the clock in getting Mother's Day dinner...

    In the doghouse. Help???

That will be Plan B. Of course, the dish is a nice, heart-shaped dish that is discontinued. How funny is that? It really was the perfect size though :)

    In the doghouse. Help???

Indeed! Wish I'd thought of that. I will keep that in mind.

    In the doghouse. Help???

I wonder if anyone can help. I put a crock (Henn crockery that is oven safe) into a tin pan and had in on the bottom rack with baked beans catching rib drippings for five hours. Beans were fantastic. Unfortunately, the crock now has a nice smoke stain all over it. I had not foreseen that...

    Ideas for leftovers?

Happy Thanksgiving everyone. I'm heading to mom's tomorrow so not cooking but have a 17 pound bird in the fridge (the free supermarket kind with some kind of 6% injection) that I plan to cook later this week as a dry run for Christmas dinner. Without the typical army to eat it, I'm going to...

Pair of Chuckies for Pulled Beef

You could slice them but I don't think you'd want to bring them all the way up to 210 IT. I've seen some posts where guys slice them at 140 or so. I've not done it though. If I did this cook again, I think I'd back off the Montreal a bit to lessen the saltiness, but just a bit. Maybe add...

First smoke - Ribs, and plenty of 'em

Hi Bill. I had 70 people at the party, but around half of that were little kids who didn't eat too much - but there were a couple tweener boys in there with appetites. I had about one rack leftover. Thanks for the kind words.
