Zucchini Bread on the 14 1/2'' WSM

I sincerely hope I don't put anybody to sleep with this little cook. I read Bill's Carne Asada post the other day and he showed a picture of his wife's zucchini bread on his plate shot. Got me thinking about zucchini bread. I haven't made it for years. Used to do it all the time when I had a nice vegetable garden. Don't plant too much of a garden up here as the deer like it better than we do, and they can be very persistent. Anyway, picked up some nice zucchini at the store and gave it a try on my small WSM. Here's some pic's. Was going to show them with my cook tonight but I had to postpone it so here's the bread.

Started with some nice zucchini. Enough to make a couple of cups grated.



Mixed grated zucchini with eggs, sugar, oil and vanilla. Folded in sifted mixture of flour, salt, baking powder, baking soda and cinnamon. Added some coarsely chopped walnuts. Made a nice batter.



Poured in foil baking pans.



OK. On the little WSM as a steady 325 degrees.



The bread cooked for one hour and twenty minutes. Had a little temperature fluctuation due to afternoon wind.



In house to cool.



Ready to eat.



Sliced up.



OK. WAKE UP! We had leftovers for dinner last night but had this for dessert. It was delicious, just as I remembered it. Thanks to Bill for jogging my memory. I'll do a post with some real food in it later this weekend.

My friend that looks fantastic, I know it was good as it is very similar to what my CEO makes though she won't tell me all the ingredients like you do. Well done
 
That is some awesome looking bread and I haven't made that before but its going to be one of my next bakes. Great pics also.
