Some Chicken and Andouille sausage on the grill. Chicken seasoned with some Yummy Chicken seasoning from Knox's Spice Co.

Plated. The Yummy Chicken seasoning is pretty darn good, I recommend it. The sausage is made at a local market and they know how to make some sausage.

cactus has kind of unique taste. Its has a slimy texture to it and is kind of bitter but not too bad. I really like it. My Sister in Law has a couple of huge plants in her back yard and gives it to us all the time.

Looks excellent, and we LOVE nopales at out house. Thankfully we have an excellent mexi grocery store, and they've always got nopal in stock. I think you hit the texture pretty well, kinda slimy, firmish, kind of like a soft green bean.
 
oh yeah! that looks good!

I love to back up chicken with some good sausage, and the cactus looks like it grills up great.

Jim's description was funny but Mike R gets the award for being the toughest guy on this forum. If you go back and read his reply to this post he stated he likes cactus in the Outhouse. OUCH!
