So, I think Chris should give an award for who has messed up the most ways. A time or two before this cook, I panicked because my temps ran down so low, only to finally realise I hadn't put the probe back into the smoker, I was getting the outside temp.
Just now, everything about done, and I want to crisp the chicken skin. So, I'll take out the water pan, and grill the little thighs on the smoker. Nope, you're wrong. No trouble with the water pan. But, when I go to put the lower grate where the chicken was back on the upper level, your local genius forgets it's slightly smaller, and down the go into the ashes.
Anybody asks, they're supposed to be that way!
