Pie in the sky-get anything you want. What would you like in a wsm workstation?

#1 large meat prep area to trim and rub that can be easily cleaned

#2 Area to set hot items on: charcoal starter, lid, top grate etc.

#3 post cook foiling area

#4 area to shield wsm in event of wind/rain

#5 area for tongs/spatula
 
An aluminum foil dispenser with a cutter edge that will hold a roll of restaurant-size wide foil.

Same for heat-safe plastic wrap.
 
Re the sink, at the moment, I'd personally like to have a sink just large enough for hand washing and rinsing off tools and pans. I'd rather do my prep work (trimming and rubbing) in a cooler kitchen. Can you imagine doing all that outside on a 95-degree day? I'd like to know how they handle that at competitions.

Might have to add an electrical outlet for a fan for cooling the cook/drying the meat and fish, keeping flies off the food, a Guru if applicable, and any other electric accessories.

Might need a windscreen for the work station as well.

Then you could put a top on the as a sunshade, and while you're at it, install an air conditioning unit since you'll now have a mini-room.......stop me, somebody!

OK guys, we are looking for new ideas here...not just mine. Have some fun with this one, what else would you want? Beer cooler?
 
Steve, the fan is a must! You ought to be dripping after 40 pounds of butt! The humidity is finally up (ugh!) in the Southeast to close to normal levels....very late this year, no rain, drought conditions. We've really enjoyed the lower than usual humidity in the last month in Georgia, but I'm afraid that it's time to pay the piper. In the last 45 years in Atlanta, I can't recall enjoying such a comfortable, cool, dry May and early June.

Those 40 pounds ought to last you a day or two.

Ok, Ok! I want a readily available tote cart, and a new bottom section that has an ash catcher like the One-Touch Gold Kettles. And if I cant have those, then I would settle for a Ranch Kettle sized WSM!

As long as we're wishing, I want a table that will hold a WSM and a 22.5" kettle, sort of like you see with the Big Green Egg's, with space in between for prep and removing hot food from the grills to take inside. Table should have a lower shelf all the way across the bottom to hold accessories and extra Kingsford, etc. The WSM would be modified to hold an ash catcher from an 18.5" kettle and would place a pan/bowl underneath the table to catch the cooled ash for disposal.

Table would also have a raised portion in the back to hold 3 NuTemp transmitters and the BBQ Guru control box, all which would be removable after the cook is finished.

Also want holders for hot gloves, paper towel rolls and aluminum foil. Also a small fridge to hold the cooks beverages. And XM radio/CD player to add to the mood. Satellite TV might be pushing it, lol. This whole table setup should have steerable wheels mounted on it to move into and out of the garage and be covered with a tarp.

Almost forgot, a oscillating fan and a waterproof awning to place all this technology under. As heavy as it's getting, maybe a trailer hitch to hook it up to the truck, to get it out to the back yard and back again

Hello All!

First, I must thank many of you on this post for your imput on this site over the years. I have owned my WSM for several years, and this community (many of you)made the learning curve quite simple. Thank!!!!

I could not pass this post up. I am in the final stages of building my WSM and 22 1/2 Kettle into a 7 X 3.5 foot counter top. The body of the cabinet has been enough to this point to provide addequet wind protection even with ample air flow in the cabinet. (vents on all sides and the back is wide open.) The WSM sits on a lazy susan inside the cabinet so I can access the vents. It looks like an outdoor kitchen. I also built a pedistal for the charcoal starter.

I built it out of steel studs, cement board, ceramic tile and stucco. Sounds harder than it is. My challenges were figuring it out. Cost more in time than money.

Perhaps this will inspire a few of you.

Fortunately I have an area that most of your "wish list" is incorporated. Here's a few additional pictures of some of the things you wish for. I had previously posted some pictures under "Just Conversation"

It took me alot of nights tending the WSM's (and probably a few adult beverages too) to come up with this creation. Still working on it. Currently filling cracks in the countertop and figuring out how to waterproof. In August adding an additional 8 foot of shed to cover the counter.

Wow, what a great set-up. To waterproof, maybe try some marine grade poly or varnish.

Dan,

Your shed looks great. However, your property looks even greater! Living in the Los Angeles area we don't get the chance to appreciate those grand trees in your backyard!
