WSM Spatchcock Bird

A four pound chicken briefly marinated in Goya Mojo Criollo then seasoned with Penzey's Old World Seasoning.

using the WSM without the waterpan, i filled the charcoal chamber with a chimney of hot kingsford

sliced a few Yukons 'bout an inch thick an' tossed um on a CIS

then the bird hit the Weber

after a while, turned her over

a fantastic tasting chicken, i believe the best way to grill a bird is direct on the WSM

Great looking color on that chicken! I bet it tasted as good as it looks! But inquiring minds want to know--what kind of Weber is this? :D

Bravo! (Standing ovation) ......I have a whole chicken in my freezer that will soon be getting this treatment. Those yukons look magnificent as well.
 
Super looking yardbird, taters and trees, Jim! I love using the WSM without the pan for chicken also.
 
I've been trying to cook chicken that looks like that for a while. Looks fantastic! Taking the water pan out is a great idea. I'm constantly amazed at how much I'm learning from this forum and folks like you Jim. Thanks!

I see you used your 22" and 1 chimney. I have an 18". Should I use maybe 3/4 chimney(or less) or does the difference in size of the smokers not matter? With no water pan I'm guessing there would be no way to control the heat if the exterior is getting done too quickly.
 
Danny: i dont use an 18" but i guess a chimney will be just as good. Flip it or baste(thinking cornell or roadside) a bit more. Will be just fine. Wurst case senario choke down the bottoms to 75% opend.

No way!!! That's your stove? Is that real? I think you won... Who ever has the more toys wins :)
 
I love your stove, Mr. Lampe. I do not want to intrude by posting pcitures in your thread , but I think the new 2013 model is even nicer. Here is mine. They have added a "EZ-smoke"- feature as well as a PID-controller. Not cheap, but a very nice stove:
