WSM - Smoked Brisket DISASTER


 
Just another quick note, high heat is in the 300+ range. 250F to 275F is just a quicker way to get there than 225F to 250F.
Also, if you end up with shoe leather, you can usually salvage the meat in a low crock pot with some liquid. I tend to do this with the thin end of a brisket along with some veg, potatoes and broth.
