WSM Prime Rib

My wife bought this boneless prime rib. I just put salt, pepper, garlic and a pinch of thyme on it and 1/4 cup red wine.

Whats a good IT for rare PR like my wife likes.

Looks like you butterflied it so it laid out flat? Or did it come like that from the store? Never seen that before.
