I recently moved from Louisiana to California and in the process sold my wood burner and bought a WSM.  Due to availability/cost of wood and space limitations, this was a good decision.  I like the WSM and have had good results.  One problem that I have and cannot seem to solve is the inability to get the temperature high enough.  Today, I am cooking 2 butts and started with a ring full of Kingsford, added a full Webber chimney of hot coals, and hot water in the water pan.  They have been cooking for about one hour.  With all vents open 100, the dome temp is 273 and the top grate temp is 224.  I would like to use charcoal rather than lump to get the long burn times, if possible.
