WSM like a Webber Kettle kinda?!!!


 
I'm not adventurous with my WSM. My only change from normal; if I'm only using the top grate to smoke, I don't use the water pan at all. Treat it like a drum smoker. Using both grates I use the pan, sometimes with and sometimes without water.
 
I have thought about using my wsm as a kettle before.
I think Phil in Florence posted or rather reposted a way to raise your coals with new stand offs.
I say that because I’ve seen this mod before his vid I believe.

It seemed like a cool idea, but what are the real benefits of doing this mod?
The only one I could think of is having no kettle on my deck.
Maybe easier more forgiving heat control?
I dunno.
I ended up never trying it because I like BBQing with my Weber performer.
Why do you guys do this?
 
Never grilled on a WSM as I have 2 kettles to do that but I've always loved doing Chicken portions big drum smoker style by just removing the waterpan and left the juices drip on the coals to make it's own smoke....I've always loved this way of cooking chicken, it crisps the skin and really gets a nice colour to it. I never bothered to do burgers this way.
