Finally made the plunge and my WSM is here! Got it from Amazon, shipping free, and only took one week to get to Houston, TX.

Starting out this weekend with chicken and ribs. Got tons of help from this site and will put in use. Thanks again to everyone for your help.

I will repost on the results.

You have a great time, I won't be using a WSM for a bit, cooking 450 pounds of ribs and 400 pounds of chicken for a festival this weekend, Traeger time. Doing deep fried turkeys and some meatball concoction plus salads for 75 the next weekend, and the week after that butt and chicken for 450, Traeger again.

Just like Jim, I am smoking ribs and chicken. Unlike Jim, my pounds of meat are in the single to double digits.

Can't believe I have been cooking for twenty years and leaving the membrane on the ribs. Oh well, going to prep them and the two chickens now. Will be firing the beast up tomorrow.

I will be teaching my eleven year old son how to smoke tomorrow. (that didn't sound right...)
