WSM Grilling

What is the best way to set-up my WSM Classic for GRILLING somes steaks,i.e., how much charcoal,distance of charcoal grate, etc.??

Charles - I can't get that link to work.

I've grilling on the WSM in two different ways: the "Little Black Egg" configuration where the cooking grate sits on the charcoal ring in the lower bowl and the lid is used to cover as necessary, and a "tall grill" where I took out the water pan and grilled with the grill grate in the upper position - great for chicken. I would think the Little Black Egg configuration would work better for "classic" grilling.

Charles: Nice Pic and thanx for your help. I have a WSM Classic and OTG but wasa thinking about buying a Weber Smokey Joe or Old Smokey Grill for when I cook for only the wife and me. I have never used my WSM as a grill so your advice is greatly appreciated. Question, that is not the stock Weber Grill on your WSM???

It is indeed the stock (upper) grate.
Set up this way, the grate will sit on top of the charcoal ring. You cannot adjust anything but the bottom vents, so be careful.
When I do chicken like this, I never take my eyes off the pieces, they'll flare up too quick and burn.
 
I setup two ways ...

1 - Charcoal grate at bottom cooking grate position then ring filled with coals good for general grilling.

2 - Charcoal grate at bottom cooking grate position, then ring, the another charcoal grate with goals good for searing.
 
I use the same setup as TravisH. I use the grate off my 22.5 OTS and place it on the charcoal ring at the bottom cooking grate position when I'm searing steaks. It works really great.

I have had my WSM classic for over 2 years and never grilled on it as I also have a OTG. Since all the grease from the meat or poultry dripped down into the Water Pan I am wondering how you guys go about cleaning up your WSM after grilling up some chicken or steaks? Maybe this is part of the on-going "seasoning" process for the WSM??
