This video that @Chris Allingham posted on Youtube could not have come at a better time. I was wondering what was up with the FLIR photo that he posted on Instagram a few weeks back, and now I know. Over the weekend I was getting a temp reading from my grate probe of about 275 - 280F and could not figure out for the life of me why. (My Thermopen and Lid thermometer were closer to 210 F) I assumed it was possibly a faulty probe and swapped it out with a different one, granted it was placed more in the centre of the grate, rather than the outer side of the grate. The fresh probe had a more accurate temp reading. After seeing this video and learning about the burn zone (...thanks water pan), I’ll know to keep the probes more centralized on the grate for my next cook. Excellent video Chris.
