WSM 18.5 rim cleaning

On the remainder of the smoker I can pretty much figure out the cleaning, but I'm stumped on the rim of the middle section that holds the lid.

I notice after my first 5 cooks it's starting to build up a little gunk that has become hard. I'm concerned about the lid not fitting tight in the future. Do you folks clean that or just let it go?

Brian, that's one area I do not clean.
I like the build up to keep a good seal there.
I do, however, clean the bottom of the lid on occasion that sits in that rim (gunk).

Thanks for the quick response. I went out and looked at the bottom of the rim and sure enough that area did need some attention. There were a number of "gunk pimples" on the bottom that I just scraped off.

Yes, those you want to scrap off otherwise, one day, you'll lift your lid checking on your prized ribs and find BLACK SPOTS allllll over them.
Brian, I use my WSM at least once a week and I check on those "gunk pimples" about every fourth cook.
Actually Brian, I wouldn't MIND being on your back deck right now...

Hi Brian, once you get the hard crud off, you can twist the lid while the smoker is running and the gunk is still gooey. This helps to shape it over time and get an ever better seal as you use it.
