I only pulled one of the butts in the pics and do not have a pic of what that pan looked like after all three butts were pulled! They pulled very easily.

Very black - hell yeah

Here's a shot of one of the butts next to some pulled meat. Contrast?

That pan got very full (way over the top). Took me one hour to pull all three butts. Can't wait to eat today!

Holy WOW,butt-man! That's a huge and beautiful butt! I started drooling while looking at your pics. Good job my friend.

Brian - Awesome looking butts!! That "very black" pic is something I can never quite seem to master. Does the rub you use have alot of brown sugar to produce such a good bark?

Thanks to all for the kind words. You guys are awesome, as always.

Yes, I did use brown sugar. I threw the rub together myself. Total of 19.5lb worth of butts and I used the following for them:

3 tbsp brown sugar
3 tbsp paprika
1 tbsp garlic powder
2 tbsp black pepper
1 tsp salt (maybe a little less than that)
1 tbsp red pepper flakes

The pork has already been consumed. The crowd loved it, especially with my home-made Eastern Carolina-style sauce. Over 20 sandwiches made and still had a significant amount of pork left. I made rice & beans (gandules) and my friends ate the pork with this, together.
