A couple of Saturdays ago my wife and I were headed to Hubertus to meet some friends for dinner when we came across The Barbecue Company on the southwest corner of WI state roads 83 and 167.
There's an outdoor tent sheltering a couple of picnic tables and a few booths and tables inside. The restaurant started as a competition team and caterer in Arizona and branched out into Wisconsin about 6 years ago.
Since we would be eating dinner (and Saturday = prime rib) before too long we had to take it easy. After weighing the options and wishing we could order more we decided to split a brisket sandwich. The beef had a nice amount of smoke and was nicely tender; it's held in jus after being sliced. For a minute I did think that I should call our friends and tell them that we had a better idea...
What a great way to use a soda syrup dispenser!
Sure, we ruined our dinners a little bit by being less hungry but it was worth it!
