Will I get food poisoning?

So for the super bowl I got 2 Tri Tip roasts from Costco last night and I plan on smoking them for the super bowl, but I accidently left them sitting on the counter when we got home from the store....They were left on the counter for probably 2 hours before I realized they didn't get put in the fridge! Will they be okay to eat medium rare??? They have now been in the fridge ever since but I worry about the time they were left on the counter since I will be cooking them to medium rare. Also I had planned to let them sit out for about 30 minutes before I smoke them, but I wonder if that is a good idea since they have already had time exposed at room temperature. If they are okay to cook to medium rare should I still go ahead and sit them out before smoking, and if so for how long? Thanks in advance.
 
Not to worry. You're good to go. Cook them as you ordinarily would. Two hours out is no problem

Will be okay to sit them out for a 2nd time before I smoke them? If so how long should I sit them out? I was thinking 30 minutes but I have never made tri tip before...
 
Yes you can do that. 30 minutes will be fine. The fact that they were not refrigerated for two hours didn't affect them a bit. I've never done tri-tip on the smoker. I use my kettle. Let us know how they were.

No Problem! I guess the USDA covers the extreme cases,And cant tell ppl that its ok after 5+ hours. If they did and some one got sick they will be in cort faster then the meat turns bad. Dont worry mate...Cook it like planned and enjoy it! Or sue me :cool:
 
In my day job (Canning) I work with USDA regs and they have a big safety factor built in. Don't abuse the recomendations but sounds like you don't have an issue.
