Wild turkey breast


 
Yes, I have done turkey breast on the kettle...I actually prefer the kettle for poultry..its a cooking machine.they come out great. Poultry I like to cook at higher temps, due to very little fat. Being a wild bird, I would brine it...a nice honey brine would be great. Smoke that bird w/ some apple/cherry...will excellent. Let us know how it turns out.

Yes brine it and cook it high heat (325º-350º) on the WSM to an internal of no higher than 155º. Carry over heat will cook it to 160º after loosly tenting in foil and resting for 20-30 min. Slice and enjoy.
