Wifey bought pork belly by mistake - What to do with it?


 
The bacon's done, and here it is:

Now it's in a bag in iced water cooling down.

How long will it keep, and how should I store it?

You, my friend, have a nice slab of bacon there.

You can keep it in your fridge for at least 2 weeks, I think. That is, if you used curing salt, which helps preserve it. Smoke also improves shelf life.

Otherwise, you can wrap it tightly (or vac pac if you have it) and freeze it for probably up to a year.
 
The official BBQ scorer just changed his call from an error to a hit. Fine looking bacon.

I've thanked my wife, and asked her to buy some more 'ribs' because I'm hooked and the bacon's almost all gone.
