Who's firing up their WSMs this weekend, and what's on the menu?

P.S. A locally owned hardware store in town has the 22-1/2" one-touch Weber on sale for $64.00 through this weekend. Hmmmmmmmm....... /infopop/emoticons/icon_wink.gif
 
I have been using the weber kettle more lately it seems. I have grilled a butterflied leg of lamb, peking duck, steaks,veggies, etc. I love it and I am also using lump for the first time and it is fantastic. If I smoke this weekend it will probably be baby backs with a mixture of lump and kingsford. I have been toying with the idea of using vanilla beans in a sweet sauce on ribs but haven't figured out how I would do it.
 
I've got a hankerin' for brisket, so I'll do one overnight Saturday for Sunday dinner. Can't wait!

Entertaining clients tonite with 12 racks of ribs! Serving my baked beans and DRBBQ's cornbread casserole. These folks wanted to try a "real" BBQ meal.

For appetizers I made up some of my Southern Jalapaeno Relish and Fresh From the Garden Salsa. Just enough to peak the ole taste buds and not fill up the ole belly!
 
I am thawing a frozen Brisket and two Racks of Spares. Have to make Rub this morning and cook up some BBQ sauce.

Wally World had 4 bags of lump yesterday. Greedy me bought them all. I'll start the charcoal in the morning with Bruce Kennedy's version of the Minion Method. Lump on the outside of the ring and a chimney of Kingsford in the center.

Brisket on the bottom rack and ribs on the top rack. Ribs will be ready for dinner. Brisket will be for supper the next evening. Works for me!!
 
Y'all have gone and done it to me! Now I'm just going to have to put on some ribs this weekend.

A day without ribs is a day without sunshine!

I'm cooking for a friends graduation party Saturday afternoon. Puttin' on 9 racks of ribs, 3 briskets, 2 butts, 6 tri tips, 4 chickens, and grilling 8lbs of drumsticks and 6 lbs of thighs.

No, I'm not doing it all on the WSM. :-)

I will be doing the briskets and butts on the WSM though. Should be a good party.

I'll be runnin' my *** of that night though. Have to get up at 4am to make it to Paul Kirk's class in Vancouver, WA at 7am Sunday morning.
 
Ooh, it all sounds so good! I have a brisket point in the freezer; I think I'll toss that on with the pork butt for an overnighter Friday or Saturday night. YUM.

I haven't cooked any beef ribs since last October. Looks like a plan for Saturday! Had some pretty good success with back ribs last weekend. I made the "Sweet-And-Smoky Barbeque Sauce" found in Steven Raichlen's Barbeque Bible. Really easy recipe with very good results! Lots of praise from guests who didn't see me make it. Always be sure to get some on your glasses and clothes while making it. Your audience will think you worked a heck of a lot harder than you really did!

Unfortunately, I won't have time to 'Q this weekend. I'll probably figure out something to grill on Saturday night. Something I've been doing lately is using the Weber kettle with the indirect method and adding smoke wood. I also will use rubs and sauce. This works well for chicken, pork chops, and ribs, but I don't think it would do so well with the bigger things such as brisket and butt.

We're supposed to have cloudy weather this weekend, though no rain is predicted. This weekend is the Dixieland Jazz Festival, which is always great fun. I've recently taken up rowing, so this year I'll go for a row on the bay and listen to whoever is playing along the waterfront. Definitely a good weekend for smoking. In addition to the butt and brisket, I think it's going to be ribs on Sunday!

Brined chicken halves on the WSM. Will cook using a pizza stone for temp control instead of the water pan. Shootin for a 275 deg cook with nice skin and moist meat.
 
I cooked 2 racks of spares Thursday. SOME OF US HAVE TO WORK ON THE WEEKEND!!!!!!!!!!!!!!!!!!!!!
They turned out fair. This means that I'll have to try again soon. Happy Qin'. /infopop/emoticons/icon_smile.gif

Don't feel alone..... I'm working this weekend, too. Fortunately, I work at home so I can squeeze in some cooking time while I'm at it. /infopop/emoticons/icon_wink.gif

Smoking 6 racks of back ribs a la Chris Allingham BRITU for my son Carlos First Communion along with some somoked susage (store bought) that I tosed in the WSM , baked potatoes corn on the cob and green salad, we are expecting to feed about 8 adults and 8 children. We'll have fun. And I hope you all too!
