Who waits for WSM to get to temp before adding meat?


 
When I had my UDS I would put meat on as soon as I put hot coals in basket. My stick burner I always waited for it to get to temp and do that for WSM. Thinking WSM like a UDS and can just put meat on as soon as I put hot coals on so when it doe sgetto temp I am not taking lid off to put meat on and dropping temp and messing with guru.

What does everyone else do?
 
I wait for the wsm to come up to temp 235-250. What ever temp it settles on I'm fine with it. Usually takes 30-40 min. Meanwhile I prep my ribs or pork butt.
 
I do a Minion start with a fully loaded ring, dump the lit over the smokewood. The meat is already loaded in the mid-section, I don't use water just a foiled pan, and with handles I just lift it and set it in the bowel. Vents are fully opened and get closed when Im 25 deg shy of target.

It's not that I wait for the temps to come up as much as getting a clean burning fire.
I pretty much wait for all the big, white, billow-y smoke to clear out before adding meat. 30-45 minutes or so.
