Which one to believe???

I'm getting conflicting temp readings on my WSM.

My probe through a cork at grate level says 320.
My lid thermometer says 295.
An oven thermometer sitting on the grate says 300.

I smoked my first 2 fattys and they were both done (165) in like a little over an hour, which led me to believe that one of the thermometers were wrong. (I thought it would be 2 plus hours)

I tried to cook em at 250, which is what the lid temp was saying, but my temp probes in the fattys reached 165 pretty quick.

I'm stumped. Any idea's??
 
you're saying you want to cook at 250, however, you're no where near that an any of the thermometers you have. Since two of them are pretty close, I would trust those two and get the temp down to the range you're trying to cook in.

When you get a chance, test your thermometers.
