Next Saturday I am planning to bring BRITU ribs to my cousin’s house, which will be a 90 minute car ride. I am planning to begin the cook 4.5 hours before we leave at 2 PM, so after I take the cooked racks off the smoker should I sauce the ribs and foil prior to the 90 minute car ride? Or is it preferable to just foil and then apply the sauce at her house? My only concern with saucing at her house is there will be 30 people in her house so there may not be any space on her counter to sauce the racks and then cut up into individual portions.
