Made this tonight very good very very good.
I followed this recipe, but used cilantro over parsley. No action photos as this was cooked inside. Super busy day and this was a quick dinner option.
As soon as I saw the recipe that was my first thought (damn gringo)!!! The recipe calling for parsley almost lead me to not making it. I thought if you are going to put parsley on a taco then can the recipe be any good at all. But I am glad I made it, with the switch, it put the spotlight on the shrimp with complete Mexican flavors in the background.
Wow - now I pretty much HAVE to make some tacos soon.... the only question is what kind? I lean toward shredded pork or beef tacos most of the time so maybe I go that direction.
