What's the ideal Oktoberfest menu?


 
If you're drinking the right beer you don't need food; but if you must you guys overlooked soft pretzels, liverwurst and onions and if you really want to stink lidacrantz (sp)
 
We had a pretty good Oktoberfest meal of sorts, this weekend while on vacation:

-Smoked Porkchops (bought from / smoked by local butcher - Bunzel's)
-Baked IN Saurkraut (Sweet Bavarian Style)
-Spaetzel with sauteed cracker crumbs over the top

Washed it down with some Paulaner Oktoberfest Bier (my favorite of the German Oktoberfest beers)

Other German favorites:
-Jaegerschnitzel ("Hunter's Schnitzel") made with sauteed onions & fresh assorted mushrooms, in a brown gravy. I prefer it made with Pork Loin vs. veal.
-Assorted Sausages
-Pretzels, stuffed with Jalepenos & cheese

Yup - I think that's what we had. Although they were store-bought (but, from a small butcher that does their own smoking) there was a smoke ring around the perimeter of the chop, and the top & bottom were "clean" (you can tell they had been sliced / band-saweed from a whole smoked loin). But - I will definitely have to give this a whirl myself sometime. (With a Currant chutney type sauce to go with it...)

When I was a grad student back a few years after the Flood, we used to go to a huge German pub/restaurant. The real thing in an area called Kitchener/ Waterloo - all German. This place specialized in rolled ribs. It was a small rack of baked ribs rolled up with a bread stuffing. With sauerkraut or coleslaw and a slice of buttered bred, it cost $4. We went there a lot.

That, for me, is the ultimate German meal. Btw, KW has the largest Oktoberfest in North America.
 
I was there in 77. BRATS aund BEER! Breakfast of Champions!

Kraut braised pork shoulder or country style ribs. You can throw red potatoes, turnips, parsnips or any root veg in for the last half hour. I like lots of onions and caraway seeds in the kraut. Even people who hate kraut love this pork. Fork tender and full of flavor. And this is true German peasant food (actually all of central and eastern Europe)!

Did it again tonight:

Smoked country sausage simmerred in saurkraut.

The details:

-Sausage was sized like ring Bologna, but
was pork & turkey, nice and smokey!
-Browned it (crisped the skin) on the Grill
-Saurkraut = Usingers "Bavarian Festival"
includes / pre-cooked with bits of bacon and apple,
plus lots of caraway seed

Washed it all down with some New Glarus Apple Ale (their "un-plugged" series). A nice, hearty ale with a little hit of tart apple at the end.

Wife had left-over mac-n-cheese.... ;-P

Hey Mike I grew up in KW and I love rolled stuffed ribs. My Mom did them in a crock pot. I tried them on the kettle a while back and they turned out pretty good.

If your looking for great rolled ribs there is a restaurant in St Agatha that does a Sunday brunch with all you can eat. Don't know the name but I think it's the only restaurant in town. Haven't been in a couple years but I'm pretty sure it's still there. If you want the details I can get them from my sister.
