Whats everyones specialty cook on smoker?


 
I pretty much have nailed down my Tri-Tips. and or course Pork butts but as already mentioned its hard to screw those up.
 
I rotate my Smokes so I'm always cooking something different I'm good on Butts, Ribs, Beef Short Ribs, Fatty's, Chuck Roast, Turkey.

Brisket is really the only cook that keeps me on my toes, last one I did the Point which I chopped up for burnt ends were delicious, the flat came out a little dry. I may try to separate the point and flat before cooking the next one. The one I cooked before that I felt was my best Brisket.
