(this is the one with the wine, vinegar, apple juice, worchesteshire, etc. then rub) the brisket I made was tender but had a bitter aftertaste. Was this the wine/vinegar combo. The brisket looked great. Brisket was 7lb and cooked for 14 hours(temps ran low-200-220) Thanks
 
that recipie is very detailed, thats tough. It wasn't a smokey bitterness was it? Did the meat smell funny at first, often I read of meat being funky, and that it can even last through the cook (so i've read, an example is: someone here thought there meat smelled a little off, didn't think much of it, but when pulled from smoker noticed again, or maybe even ate some, I just forget.) Thats about all I have for you esp. since you've done that procedure plenty of times. Im not going to tell you the recipie is funky because its just not true and I wouldn't want to read that. I don't have near the steps as him but chances are everyone on the board is probably a better cook then I!

Thanks for your reply. Made this recipe at least 12 times. Every time the same. Only difference is bottle of wine which was only 2 years old. Maybe just bad luck. Going to have a bad one once in a while. Glad only my wife, daughter and i this time.

You may be right as this is the only variable which had changed. It was a bottle from a christmas gift. I usually use the wine from trader joes which i buy by the case to cook with. I did not perform a sniff or taste test. the bottle had a label saying it had won multiple awards. Not mine.
I think I will jump back in with my standard wine and make another brisket. Need to because I got my chef's choice slicer today in the mail
