well things are getting ready for tomorrow. I am still undecided if I am going to wake up early enough to brine the birds, 5 lb. roasters.
When we at the store tonight, I picked up a small ring of bologna. Is it possible to smoke this for a short period? I am not sure since I will be doing a high heat cook.
I was thinking about adding it with the brisket, to get the mesquite smoke on it, then take it off when I foil (about 1.5 - 2 hours depending) or will that be too long?
