I did some ribs yesterday at 250 deg. with a 267 deg. spike. Baby back ribs came out really moist, tender, good bark. They only weighed 1.7 lbs cooked on the bottom rack with brinkman water pan. Mustard slather and homemade rub. Took 3.5 hours and were very tender and didnt need any more cooking.

What temps are you cooking at?

I just cooked some baby backs today on my WSM. I used Wild Willy's Number One-derful rub. Ever since I got the WSM I have tried to maintain 225 with baby backs. Today I got sidetracked and checked temp of cooker after first hour and temp was at 247. I reduced air intake vents and temp stabilized at 220-225. Cooked ribs for 4 hours and removed from smoker, sprayed with apple juice, re-rubbed, foiled, and returned to cooker.

After I put ribs back on smoker I opened intake vents wide open, temps rose to around 250. I cooked for two more hours. These ribs were excellent, IMHO. Great bark, flavor, and taste. I will definately try to duplicate this again.
