Don't worry about the difference between the lid and temp, they end up equalling out over time. I like keeping my lid temp between 245º-260º and I don't worry about any other 'level' of temps.
Make sure you check the stock therm and see if it's correct or how much it's off so you'll see how accurate your temps are.
