What is the grey edge on packer?

Wallmart packers all seem to have one edge or side where the meat is grey. What is it? It looks like the exposed edge of a larger cut. Not really thinking about it, I have not trimmed it on some cooks. Today I trimmed a thin slice to get to good virgin beef meat underneath. What should we be doing?
 
I don't know what it is, but I get that on some of my briskets. I have a very basic rule when cooking - if I don't like it, it's gone. I don't like anything grey on my raw meat, so in the case of a brisket, I take a thin slice just like you di to get back to fresh meat.
